If you’re looking for a way to take an old standby and make it a little healthier, then this is a great recipe for you. Somehow you can make muffins without sugar or flour and they can still manage to taste good. My boys love these muffins, but I have to admit that they usually con me into throwing some chocolate chips into the batter. So, if you feel like being healthy, but still treating yourself, then feel free to toss in a handful (about a 1/2 cup) of chocolate chips too.

Healthy Banana Oatmeal Muffins

2 1/2 cups oatmeal (not instant)

1 cup plain low fat Greek yogurt

2 eggs

1/2 cup honey

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

2 tablespoon ground flax seed

1 teaspoon vanilla

2 ripe bananas

Throw the oatmeal in a food processor and process for about 10 seconds. Now add all of the rest of the ingredients to the processor and process until everything is mixed together and smooth. (Now you can add the chocolate chips. Be sure to stir them in by hand so they don’t get chopped into little pieces.)

Grease muffin tins and then fill the tins 2/3 full with the batter. Bake at 400 degrees for 18 minutes, or until when a toothpick is poked into a muffin it comes out clean.
